做法:春笋切成片后加少许(xǔ )盐(yán )捞出(chū )后用(yòng )清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中(zhōng )火。煮(zhǔ )到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖焖。
