做法:春(chūn )笋切成片后加少(shǎo )许(xǔ )盐捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入2勺(sháo )油(yóu ),放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少(shǎo )量清(qīng )水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开(kāi )后(hòu )转中火(huǒ )。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
