做法:春笋切成片后加少许盐(yán )捞出后用(yòng )清(qīng )水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入少(shǎo )量清水半掩(yǎn )住春笋,盖上锅盖(gài )大火煮开后转中火(huǒ )。煮到(dào )水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖焖。
