做法:春(chūn )笋切成片(piàn )后(hòu )加(jiā )少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右(yòu )。再(zài )加入生抽、老(lǎo )抽、蚝油翻(fān )炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
