做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清(qīng )水浸(jìn )泡,生(shēng )姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右(yòu )。再(zài )加入生抽、老抽、蚝油翻(fān )炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖(gài )焖。
