做法:春笋切成片后加少许盐捞出后(hòu )用(yòng )清水浸(jìn )泡,生姜切(qiē )片,葱切成段。锅(guō )烧(shāo )热,倒入2勺油(yóu ),放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入(rù )生抽、老抽(chōu )、蚝油翻炒均(jun1 )匀,加入少量清水(shuǐ )半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
