做法(fǎ ):春笋切成片后(hòu )加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均(jun1 )匀(yún ),加入少量清水半掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
