做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸(jìn )泡,生(shēng )姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺(sháo )油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁(zhī )时盖上(shàng )锅盖(gài )焖(mèn )。
