做法:春笋切成(chéng )片后加少许盐捞(lāo )出后用(yòng )清水浸(jìn )泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清(qīng )水半(bàn )掩(yǎn )住春笋,盖上锅(guō )盖大(dà )火煮开(kāi )后转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时(shí )盖上锅盖焖。
