做法:春笋切(qiē )成片(piàn )后加(jiā )少许盐(yán )捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅(guō )烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻(fān )炒1分钟左右。再加(jiā )入生(shēng )抽(chōu )、老抽(chōu )、蚝(háo )油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
