做法:春笋切成片后(hòu )加少许(xǔ )盐捞出后(hòu )用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀(yún ),加入(rù )少量清(qīng )水半掩住春笋,盖上锅(guō )盖大火煮开后转中(zhōng )火。煮到水快熬干(gàn )的时(shí )候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
