做(zuò )法(fǎ ):春笋切成片后加少许盐捞出后用(yòng )清水浸泡,生姜切片(piàn ),葱切成段。锅(guō )烧(shāo )热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清水半掩住春笋(sǔn ),盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻(fān )炒均匀稍收汁时(shí )盖上锅盖焖。
