做法:春笋切成片后(hòu )加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生姜(jiāng )、春笋(sǔn )、牛肉片、葱(cōng )段(duàn )翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀(yún ),加入少量(liàng )清(qīng )水半掩(yǎn )住春笋,盖上(shàng )锅盖大火煮开后转中火。煮(zhǔ )到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
