做(zuò )法:春笋切成片后加少(shǎo )许盐捞出(chū )后用(yòng )清水浸泡,生(shēng )姜切片,葱(cōng )切(qiē )成段。锅烧(shāo )热,倒入(rù )2勺油,放入生(shēng )姜、春(chūn )笋、牛肉(ròu )片、葱(cōng )段(duàn )翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均(jun1 )匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁(zhī )时盖上锅(guō )盖焖。
