做法:春笋切成片后加少许盐(yán )捞出后(hòu )用清水浸(jìn )泡,生姜(jiāng )切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量(liàng )清水半掩住春(chūn )笋,盖上(shàng )锅盖大火煮开后转中火(huǒ )。煮到(dào )水快(kuài )熬干的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
