做法:春笋(sǔn )切成(chéng )片后加(jiā )少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火(huǒ )煮开后转中(zhōng )火。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖(gài )焖。
