做(zuò )法:春笋切成片后加少许盐捞出(chū )后用(yòng )清(qīng )水浸泡,生姜切(qiē )片,葱(cōng )切(qiē )成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中(zhōng )火(huǒ )。煮到水快熬干的时(shí )候加入(rù )盐,翻炒均匀稍收汁时盖上锅(guō )盖焖。
