做法:春笋(sǔn )切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春笋、牛(niú )肉片、葱段(duàn )翻(fān )炒1分钟左右(yòu )。再加入生抽(chōu )、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖(gài )上(shàng )锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
