做法(fǎ ):春笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸(jìn )泡,生姜(jiāng )切片(piàn ),葱(cōng )切成(chéng )段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝(háo )油翻炒均匀(yún ),加(jiā )入少量清水半(bàn )掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收汁时盖上锅盖焖。
