做法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分(fèn )钟左右。再(zài )加(jiā )入生(shēng )抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的(de )时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
