做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水半掩(yǎn )住春(chūn )笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候加入盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖(gài )焖。
