做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻(fān )炒均匀,加(jiā )入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均匀稍收汁时(shí )盖(gài )上锅(guō )盖焖(mèn )。
