做法:春笋切成片后加(jiā )少许(xǔ )盐捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生(shēng )抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
