做法:春笋(sǔn )切成片后加少许盐捞出后用清水(shuǐ )浸(jìn )泡(pào ),生姜切片,葱切成段。锅(guō )烧热(rè ),倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均(jun1 )匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖焖。
