做(zuò )法:春笋切(qiē )成片后加少许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒(chǎo )均匀稍收汁时(shí )盖上锅盖焖。
