做法:春笋切成片后加少许盐捞出(chū )后用(yòng )清水浸泡,生姜切片,葱切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋、牛肉(ròu )片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入(rù )少量清水半掩(yǎn )住春(chūn )笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖上锅盖焖。
