做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生姜(jiāng )、春笋、牛肉(ròu )片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅盖(gài )大火(huǒ )煮开(kāi )后转(zhuǎn )中火。煮到(dào )水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收(shōu )汁时盖上锅盖焖。
