做(zuò )法:春笋(sǔn )切成片后加少许(xǔ )盐捞出后用(yòng )清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀(yún ),加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅盖焖。
