做法:春笋切成片后加少许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段(duàn )。锅烧热,倒入(rù )2勺油,放(fàng )入生姜、春笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀(yún ),加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水(shuǐ )快熬干(gàn )的时候加(jiā )入(rù )盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁(zhī )时(shí )盖上锅盖(gài )焖。
