做法:春笋切成片(piàn )后(hòu )加少许盐捞出后用(yòng )清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分(fèn )钟(zhōng )左右。再(zài )加(jiā )入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的(de )时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖(gài )上锅盖焖。
