做法:春笋切成片(piàn )后(hòu )加少许盐(yán )捞出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛(niú )肉片、葱段翻(fān )炒1分钟左右(yòu )。再(zài )加入生(shēng )抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加(jiā )入盐,翻(fān )炒均匀(yún )稍收汁时(shí )盖上锅盖焖。
