做法:春(chūn )笋切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左(zuǒ )右。再加入生抽(chōu )、老(lǎo )抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
