做法:洗净宰(zǎi )好鲫鱼(yú ),洗净淮山和薏米。用清水把陈皮泡软,拍裂一小块姜,热锅,用姜(jiāng )块在锅上(shàng )擦一遍,放两勺油,待(dài )油六成(chéng )热(rè )下(xià )鱼,煎至微黄。煮沸瓦(wǎ )煲里的清水(shuǐ ),放入煎煮好的(de )鲫鱼和其他材料,武火煮沸,转中小(xiǎo )火煲(bāo )一个半小(xiǎo )时(shí ),下盐(yán )调味(wèi )即可品尝(cháng )。
