做(zuò )法:春笋切成片(piàn )后加(jiā )少许盐捞出后(hòu )用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅盖焖(mèn )。
