做法:洗净(jìng )宰好鲫鱼,洗净淮山和薏米。用清(qīng )水把(bǎ )陈皮泡(pào )软(ruǎn ),拍裂一小块姜,热锅,用姜(jiāng )块在(zài )锅上擦一遍,放两勺油,待油六成(chéng )热(rè )下鱼,煎至微黄(huáng )。煮沸瓦煲里的清水(shuǐ ),放(fàng )入煎煮好的鲫鱼和(hé )其他(tā )材料,武火煮沸,转中小火煲一个半小时(shí ),下(xià )盐调(diào )味(wèi )即可品尝。
