做法:春(chūn )笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡(pào ),生(shēng )姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生(shēng )姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加(jiā )入少量清水半(bàn )掩住春(chūn )笋,盖上(shàng )锅(guō )盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
