做法:春笋(sǔn )切成片(piàn )后加(jiā )少许盐(yán )捞出(chū )后用清(qīng )水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅盖焖。
