做法(fǎ ):春笋切成片后加少许盐捞出(chū )后用清水浸泡,生(shēng )姜(jiāng )切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片(piàn )、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清水半掩住春(chūn )笋(sǔn ),盖(gài )上锅盖(gài )大火煮开后转中火。煮到水(shuǐ )快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅(guō )盖焖(mèn )。
