做法:春笋切成片后加少许盐捞出后(hòu )用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加(jiā )入少量清水(shuǐ )半(bàn )掩住春笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖(mèn )。
