做法:春笋切成片后加少许(xǔ )盐捞(lāo )出后用(yòng )清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油(yóu )翻炒均匀,加入(rù )少(shǎo )量清水半掩(yǎn )住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀稍(shāo )收汁时盖上锅盖焖。
