做法:春笋切成(chéng )片后加(jiā )少(shǎo )许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春笋、牛肉(ròu )片、葱段翻(fān )炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加(jiā )入少量清水半掩住(zhù )春(chūn )笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均(jun1 )匀(yún )稍收汁(zhī )时(shí )盖(gài )上锅盖焖。
