做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻(fān )炒均(jun1 )匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮(zhǔ )开(kāi )后(hòu )转中火。煮到水快熬干的时候加入盐,翻炒均匀稍(shāo )收(shōu )汁(zhī )时盖上锅盖焖。
