做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用(yòng )清水浸泡,生姜(jiāng )切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入(rù )生(shēng )抽、老抽、蚝(háo )油翻(fān )炒均匀,加入少量清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候(hòu )加入盐,翻炒均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
