做法(fǎ ):春(chūn )笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入少量(liàng )清水半掩(yǎn )住春笋,盖上锅(guō )盖(gài )大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅盖焖。
