做法(fǎ ):春笋切成片后加少许(xǔ )盐捞出后(hòu )用清水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分钟(zhōng )左右(yòu )。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大(dà )火(huǒ )煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖(gài )焖。
