做法:春笋(sǔn )切成片后加少许盐捞出(chū )后用清水浸泡(pào ),生姜切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油,放入(rù )生(shēng )姜(jiāng )、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开(kāi )后转中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁(zhī )时盖上锅盖焖。
