做(zuò )法:春(chūn )笋切成片后加少许盐捞(lāo )出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放(fàng )入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少(shǎo )量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
