做法:春笋(sǔn )切成片(piàn )后加少(shǎo )许盐捞出(chū )后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片、葱段翻炒1分(fèn )钟左右(yòu )。再加(jiā )入生抽(chōu )、老抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开后转中(zhōng )火。煮到水(shuǐ )快熬(áo )干(gàn )的(de )时候加入盐(yán ),翻炒均匀稍收汁时盖上锅盖焖。
