做法(fǎ ):春(chūn )笋切(qiē )成片(piàn )后(hòu )加(jiā )少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒入(rù )2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开(kāi )后转中火。煮到水快熬干的时候(hòu )加入盐(yán ),翻炒(chǎo )均匀稍收(shōu )汁时盖上锅盖(gài )焖。
