做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水(shuǐ )浸泡,生姜切(qiē )片,葱(cōng )切成段。锅(guō )烧热,倒入2勺油,放入生(shēng )姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀(yún ),加入少量(liàng )清(qīng )水半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮到水快(kuài )熬干的时候加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖焖。
